Poulet in Wok
Balti Chicken

Balti Chicken - 4-6 persons

Sweet-sour wok chicken  

 

1 kg chicken breast (I prefer thigh), 2 cm dice

 

Marinade:

8 tbsp ketchup

2 tsp sweet paprika powder

2 tsp chili powder

2 tsp cumin powder

2 tsp coriander powder

2 tbsp garam masala

2 tsp salt

2 tsp white poppy seeds

2 tbsp sesame seeds

50 gm grated coconut flesh

100 ml water

 

In a large bowl mix all the marinade ingredients. Then add the chicken and mix well together with the spices. Cover and keep aside.

 

Get cooking:

4 tbsp ghee/oil

1 tsp kalonji or Nigella seeds (black onion seeds)

2 tsp fenugreek seeds

2 bay leaves

Je 4 tsp garlic and ginger paste

250 gm cherry tomato

1 green pepper

10 gm fresh coriander

 

1        In a large wok heat the ghee, add the kalonji, fenugreek and bay leaves. Sauté till the oil gives out the spice aroma.

2        Add the garlic-ginger paste, take care not to burn!!

3        Add the chicken, bring to boil, reduce the heat, cover and simmer for 20 minutes (more for thigh). Now and then stir.

4        Add the tomato, pepper and coriander and continue to simmer for another 3 minutes. Season to taste. Goes well with naan/rice.
